Grady’s Garden Chipotle Black Bean Dip

Yields: 6 servings

Ingredients
1 head garlic, roasted
2 tablespoons coconut oil
1 cups onions (medium diced)
2 shallots (diced)
2 tablespoons garam masala
1 teaspoon kosher salt
2 teaspoon black pepper
1 teaspoon cumin
1 adobo chipotle pepper (or 2 for more spice)
Juice of one lime
1 bunch cilantro, chopped
1 can black beans
1 jar Grady’s Garden Chunky Pasta Sauce

Directions

  1. Wrap garlic in foil, and place garlic in oven to start roasting. This will take 30 minutes at 350 F.

  2. Heat oil in sauce pan and sauté onions. After a few minutes, add spices to onions as they caramelize.

  3. Add shallots and cook 3 more minutes.

  4. Drain and rinse black beans.

  5. Puree chipotle peppers with black beans, onion mixture, and Grady’s Garden Chunky Pasta Sauce.

  6. Mix well.

  7. Add fresh lime juice and cilantro. Mix well.

Serve dip in a bowl and place strong chips, crackers, or crostinis for dipping.
