Grady's Chunky Pasta Sauce with Vegetables and Rigatoni Pasta

Ingredients:

1 box (1 lb.) of Rigatoni Pasta
2 tablespoons coconut oil (or olive oil)
1 yellow squash (diced ½ inch)
1 green pepper (diced ½ inch)
1 zucchini (diced 1/2 inch)
1 carrot (diced ½ inch)
1 onion (diced)
Salt and pepper to taste
½ cup vegetable broth
1 tablespoon chopped garlic
1 jar (24 oz) Grady’s Chunky Pasta Sauce

Directions:

  1. Bring 4 quarts of water to a boil and add 2 tablespoons of salt to the water. Add pasta and stir. Follow directions according to instructions on box. Note: you may substitute any pasta.

  2. While pasta is cooking, add oil to 12-inch pan (sauté pan). Turn burner on medium and add carrots, squashes, peppers and onions. Cook 5 minutes. While cooking, season with salt and pepper.

  3. Add garlic and cook one minute

  4. Add vegetable broth and simmer for 3 minutes.

  5. Add jar of Grady’s Pasta Sauce and simmer about 8 minutes.

  6. When pasta is cooked, drain and add to simmering pasta sauce. Simmer for 4 minutes

Options: Top with 2 tablespoons chopped fresh chives.
