Slow Cooker Spicy Pumpkin and Black Bean Chili

Ingredients:

• 2 cans (15.25 oz each) Meijer black beans, drained and rinsed

• 1 can (15 oz) Meijer 100% pure pumpkin 

• 2 cups Grady's Salsa (mild or spicy, depending on preference)

• 1 cup Meijer whole kernel sweet corn (frozen or canned)

• 1 bell pepper, diced

• 1 onion, diced

• 2 cloves garlic, minced

• 2 cups Meijer vegetable broth

• 2 tsp Meijer ground cumin

• 1 tsp Meijer smoked paprika

• Salt and pepper to taste

• Optional toppings: avocado, cilantro, Meijer shredded cheese, Meijer sour cream

Instructions:

  1. Prep Ingredients: In a slow cooker, add black beans, pumpkin puree, Grady's Salsa, corn, bell pepper, onion, garlic, vegetable broth, cumin, smoked paprika, salt, and pepper.

  2. Cook: Stir to combine. Cover and cook on low for 6-8 hours or on high for 3-4 hours.

  3. Serve: Stir well before serving. Top with avocado, cilantro, shredded cheese, or sour cream as desired.
